Suet

Suet, << SOO iht, >> is the hard, white fat around the kidneys and loins of cattle and mature sheep. Suet can be melted to form tallow. Tallow is used as shortening for cooking and to prevent baked goods from hardening. Tallow also is used in making candles and soap. Suet can serve as bird feed in winter.
